PLEASE NOTE: Whole Truffles will often have a little nick , we call this a "canifer". This is a man-made nick done to check the ripeness of the flesh, by the forager. The forager will make a little cut with a special knife called a "canife”, hence the term "canifer".

In case you missed last week's update, the Black Winter Truffle (tuber melanosporum) season has now ended. However, we are ready to begin Black Summer Truffle (tuber aestivum) season as quantities have become available earlier. Our first batch will be arriving mid week.
In addition to the start of Black Summer Truffle season, the Spring is always a good time to review our complete product list (see link here). Feel free to inquire about new products you may not have tried yet.
