Asparagus & Gruyère Tart

INGREDIENTS

- 1 bunch of Asparagus
- 4 Minced Garlic Cloves
- Spoon of Dijon Mustard
- Grated Gruyere Cheese
- Salt & Pepper
- 1 Pastry Dough
- 1 Egg
- Sabatino White Truffle Oil
- Sabatino White Truffle Sauce

METHOD

    If using frozen dough, remove it from the freezer and allow it to reach room temperature. Preheat your oven to 400°F.

    Trim the ends off the asparagus and butterfly them lengthwise.

    Mince 3–4 cloves of garlic.

    In a bowl, prepare the mustard base by combining Dijon mustard, black pepper, Sabatino White Truffle Sauce, and grated Gruyère cheese. Mix well.

    Sauté the asparagus and minced garlic over medium heat for about 5 minutes, ensuring the asparagus remains firm.

    Roll out the dough on a baking sheet lined with parchment paper. Lightly score a border about 1 inch from the edges.

    Pre-bake the dough for 8–10 minutes.

    Remove from the oven and spread the mustard mixture evenly over the surface. Sprinkle grated Gruyère cheese, arrange the asparagus on top, and add more cheese if desired.

    Whisk an egg to create an egg wash and brush it over the exposed pastry edges.

    Bake for another 8–10 minutes or until the pastry is golden brown.
