Our Story
Sabatino’s journey began more than 110 years ago in Montecastrilli, a quiet village in the heart of Umbria. Sabatino and Giuseppina Balestra opened a modest shop filled with local goods, not knowing that Umbria’s “black gold” would soon become the soul of their family legacy.
From those humble beginnings, each generation carried forward the same values: hard work, respect for the land, and devotion to quality. In the 1960s, Piero Balestra expanded the family vision by investing in truffle farming, laying the foundation for the company’s future. By the 1990s, Sabatino had transformed from a small regional shop into an international company — exporting Italian truffles across Europe, North America, and beyond.
When the family opened its first U.S. operations in New York, followed by a full-scale production facility in Connecticut, Sabatino became the only Italian truffle company with a manufacturing base in the United States. Today, Sabatino operates facilities in both Italy and the U.S., serving chefs, home cooks, and leading food brands in more than 70 countries.

Our Production
Sabatino manages the full truffle supply chain: from orchards and foraging to transformation and packaging.
In Umbria, Italy, truffles are harvested from trusted hunters and family-owned farms, then cleaned and processed with a blend of tradition and technology.
In West Haven, Connecticut, our U.S. hub mirrors these same exacting standards, ensuring consistency and quality for North American markets.
Together, our two facilities span over 230,000 square feet, with 14 advanced production lines and more than 150 skilled employees. This vertical integration allows us to guarantee freshness, authenticity, and innovation in every product.
