Courgette (peeled into thin ribbons)
Fresh spinach leaves
Sabatino Truffle Pâté
Parmesan cheese, grated
Drizzle of Sabatino Truffle Oil

METHOD

1Using a vegetable peeler, slice the courgette lengthwise into thin, ribbon-like strips.

2Lay each ribbon flat and layer with a sprinkle of grated Parmesan, a few spinach leaves, a small spread of Sabatino Truffle Pâté, and a bit more Parmesan.

3Gently roll each ribbon to form bite-sized spirals.

4Arrange the courgette rolls on a plate over a bed of fresh spinach.

5Finish with a light drizzle of Sabatino Truffle Oil and a final touch of grated Parmesan.
