Creamy Gnocchi Soup
Nothing says comfort and coziness quite like a steaming bowl of gnocchi soup. With its rich flavors, hearty tomatoes, and a generous sprinkle of Parmesan cheese, it’s the perfect way to warm up on a chilly day. The soothing, savory taste will surely have you feeling thawed and rejuvenated after spending time out in the cold.
Ingredients
2 tbsp olive oil
1/2 cup onion, finely chopped
2 garlic cloves, minced
2 tbsp tomato paste
3 cups chicken or vegetable stock
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 cups fresh spinach
Salt and pepper to taste
1-2 tbsp Sabatino Black Truffle Oil
Method
- Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened and fragrant.
- Stir in the tomato paste and cook for 1-2 minutes, allowing it to caramelize slightly for added richness.
- Pour in chicken or vegetable stock and bring to a boil. Add gnocchi and cook until they float to the top (about 3-4 minutes).
- Lower heat and stir in heavy cream, Parmesan cheese, and spinach. Simmer until the spinach wilts.
- Season with salt and pepper. Remove from heat and drizzle with Sabatino Black Truffle Oil before serving.
