Creamy Gnocchi Soup

Creamy Gnocchi Soup

Ingredients

1 lb potato gnocchi 
2 tbsp olive oil 
1/2 cup onion, finely chopped 
2 garlic cloves, minced 
2 tbsp tomato paste 
3 cups chicken or vegetable stock 
1 cup heavy cream 
1/2 cup grated Parmesan cheese 
2 cups fresh spinach 
Salt and pepper to taste 
1-2 tbsp Sabatino Black Truffle Oil 

Method

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened and fragrant. 
  2. Stir in the tomato paste and cook for 1-2 minutes, allowing it to caramelize slightly for added richness. 
  3. Pour in chicken or vegetable stock and bring to a boil. Add gnocchi and cook until they float to the top (about 3-4 minutes). 
  4. Lower heat and stir in heavy cream, Parmesan cheese, and spinach. Simmer until the spinach wilts. 
  5. Season with salt and pepper. Remove from heat and drizzle with Sabatino Black Truffle Oil before serving.
