Frozen Peaches and Cream with Truffle Honey

This viral trend deserved a shot, and we are so happy we tried it! So simple, yet comes together like an elegant mousse. Snowy grated peach and lightly sweetened whipped cream drizzled with truffle honey - each flavor stands out while harmonizing delightfully.

Frozen Peaches and Cream with Truffle Honey

INGREDIENTS

1 ripe peach – frozen overnight
2/3 cup heavy cream
2 tsp powdered sugar
¼ tsp vanilla
Tiny pinch of sea salt
2-3 tbsp truffle honey

METHOD

    The night before, place the frozen peach in the freezer – it should be ‘rock hard’ when it's time to make the dish.

    Day of, use a mixer on medium to whip the cream about one minute until frothy. Add powdered sugar, salt and vanilla. Whip on high another minute or until medium peaks form in the whipped cream. Chill until ready to use.

    To serve: Use a flat, wide micro plane to grate the peach equally between four bowls. The peach defrosts quickly once grated so this should be done as quickly as possible. Hold a paper towel between your hand and the peach if it gets too cold to work with.

    Divide whipped cream between the bowls, then drizzle with truffle honey before serving.
