Truffle Honey Chocolate Truffles

INGREDIENTS
1 1/2 c semi-sweet chocolate (60%) chopped
1 cup heavy cream
3 tbsp unsalted butter, softened
2 tbsp Truffle Honey
1/4 cup unsweetened cocoa
1 cup heavy cream
3 tbsp unsalted butter, softened
2 tbsp Truffle Honey
1/4 cup unsweetened cocoa
METHOD

1Place chopped chocolate in a medium bowl. In a small saucepan, bring cream to a boil.

2Pour boiling cream over the chocolate. Let sit for two minutes, then whisk until smooth. Stir in butter and honey.

3Refrigerate until firm (at least two hours)

4Line a baking sheet with parchment or wax paper. Scoop about a tablespoon of the chocolate ganache and use your hands to roll into a ball.

5Refrigerate for 15 minutes.

6Place cocoa powder in a bowl and once the truffles are chilled, roll in the cocoa powder. Serve on a platter or in individual mini muffin tin liners.
