Truffle Parmigiano Mashed Potatoes
Mashed potatoes are the ultimate comfort food, pairing seamlessly with any meal. Add a generous sprinkle of freshly shaved Parmigiano and a touch of truffle, and you have a fluffy, irresistible side dish you’ll want to eat straight from the bowl.
Ingredients
½ stick salted butter
2 cups freshly grated Parmigiano cheese
1 cup warm milk (use as needed)
1 sprig fresh rosemary
Fresh Black Burgundy truffle
Truffle salt and freshly ground black pepper, to taste
Method
- Peel the potatoes and cut them into thirds.
- Boil in salted water until fork-tender.
- In a small saucepan, gently heat the milk with the rosemary until it simmers, allowing the flavor to infuse. Remove the rosemary before using.
- Drain the potatoes, reserving a little of the starchy cooking water.
- Add butter, Parmigiano, truffle salt, and pepper to the potatoes, then beat with an electric mixer until smooth and fluffy.
- Slowly stream in the warm infused milk, mixing until you reach your desired creamy consistency. Add a splash of the reserved potato water if needed.
- Finish with a sprinkle of truffle salt and a generous shaving of fresh truffle. Serve immediately and enjoy.
