Truffle Parmigiano Mashed Potatoes

Mashed potatoes are the ultimate comfort food, pairing seamlessly with any meal. Add a generous sprinkle of freshly shaved Parmigiano and a touch of truffle, and you have a fluffy, irresistible side dish you’ll want to eat straight from the bowl.

Truffle Parmigiano Mashed Potatoes

Ingredients

4 Russet potatoes
½ stick salted butter
2 cups freshly grated Parmigiano cheese
1 cup warm milk (use as needed)
1 sprig fresh rosemary
Fresh Black Burgundy truffle
Truffle salt and freshly ground black pepper, to taste

Method

  1. Peel the potatoes and cut them into thirds.
  2. Boil in salted water until fork-tender.
  3. In a small saucepan, gently heat the milk with the rosemary until it simmers, allowing the flavor to infuse. Remove the rosemary before using.
  4. Drain the potatoes, reserving a little of the starchy cooking water.
  5. Add butter, Parmigiano, truffle salt, and pepper to the potatoes, then beat with an electric mixer until smooth and fluffy.
  6. Slowly stream in the warm infused milk, mixing until you reach your desired creamy consistency. Add a splash of the reserved potato water if needed.
  7. Finish with a sprinkle of truffle salt and a generous shaving of fresh truffle. Serve immediately and enjoy.
