Fresh Winter Australian Truffles are Now in Season

TRUFFLE VINAIGRETTE

INGREDIENTS

1 shallot, minced (about 2 tablespoons)
1 clove garlic, minced (about 1/2 teaspoon)
2 teaspoons Dijon mustard
3 tablespoons white or red wine vinegar
1/2 cup extra virgin olive oil
2 teaspoons Sabatino Tartufi White or Black Truffle Oil
Kosher salt, to taste
Ground black pepper, to taste

DIRECTIONS

1. In a medium bowl, add minced shallots, minced garlic, mustard and vinegar and whisk together to combine until smooth.

2. Next, add Truffle Oil and whisk to combine until smooth.

3. Slowly drizzle in remaining olive oil while whisking vigorously to combine into a smooth dressing.

4. Taste and add salt and pepper to taste.
