Finished with a jammy egg and a touch of Calabrian Truffle Crunch, they strike the perfect balance of comfort and sophistication.
Ingredients
6 eggs
Salt & pepper
Butter
Parmesan cheese
Calabrian Truffle Crunch
Method
- Preheat oven to 350°F.
- Generously butter a muffin tin to prevent sticking.
- Take a handful of shredded potatoes and press into each muffin cup, forming a well in the center to resemble a bird’s nest.
- Bake for about 30 minutes, or until the potatoes are golden and crisp
- Remove from the oven and carefully crack one egg into each nest.
- Return to the oven and bake for another 8–10 minutes, or until the eggs are cooked to your preference.
- Finish with freshly shaved Parmesan and a drizzle of Calabrian Truffle Crunch. Serve over a bed of greens and enjoy.
