Courgette Rolls

These elegant bites are perfect as a summer appetizer or light lunch- delicately flavored, beautifully presents, and infused with rich truffle goodness.

Courgette Rolls

INGREDIENTS

Courgette (peeled into thin ribbons)
Fresh spinach leaves
Sabatino Truffle Pâté
Parmesan cheese, grated
Drizzle of Sabatino Truffle Oil

METHOD

    Using a vegetable peeler, slice the courgette lengthwise into thin, ribbon-like strips.

    Lay each ribbon flat and layer with a sprinkle of grated Parmesan, a few spinach leaves, a small spread of Sabatino Truffle Pâté, and a bit more Parmesan.

    Gently roll each ribbon to form bite-sized spirals.

    Arrange the courgette rolls on a plate over a bed of fresh spinach.

    Finish with a light drizzle of Sabatino Truffle Oil and a final touch of grated Parmesan.
