INGREDIENTS
1 ripe peach – frozen overnight
2/3 cup heavy cream
2 tsp powdered sugar
¼ tsp vanilla
Tiny pinch of sea salt
2-3 tbsp truffle honey
2/3 cup heavy cream
2 tsp powdered sugar
¼ tsp vanilla
Tiny pinch of sea salt
2-3 tbsp truffle honey
METHOD
-
1The night before, place the frozen peach in the freezer – it should be ‘rock hard’ when it's time to make the dish.
-
2Day of, use a mixer on medium to whip the cream about one minute until frothy. Add powdered sugar, salt and vanilla. Whip on high another minute or until medium peaks form in the whipped cream. Chill until ready to use.
-
3To serve: Use a flat, wide micro plane to grate the peach equally between four bowls. The peach defrosts quickly once grated so this should be done as quickly as possible. Hold a paper towel between your hand and the peach if it gets too cold to work with.
-
4Divide whipped cream between the bowls, then drizzle with truffle honey before serving.
