Each one begins its journey in carefully cultivated orchards across Europe and the United States, where time-honored farming traditions guide our work and nature sets the pace. Our approach is rooted in an “orchard-to-table” philosophy. From the moment a truffle begins forming underground to the instant it enhances a dish, every step is handled with care. Skilled hunters and trusted partners work together to preserve the truffle’s natural aroma, flavor, and integrity - ensuring full traceability and a product that reflects both craftsmanship and environmental responsibility.
Sustainability is especially important during harvest. While pigs were once traditionally used to locate truffles, they were phased out in the 1980s partly due to the damage they caused to delicate root systems and soil structure. Today, trained dogs lead the way. Their gentle approach allows them to detect truffles at their peak without disturbing the surrounding land, making them a far more sustainable choice. Each truffle is then carefully hand-harvested at peak ripeness, preserving its full sensory potential while maintaining the health of the orchard.
Our commitment to sustainability extends beyond truffles. We thoughtfully source ingredients from around the world—whether from ancient Mediterranean olive groves or hillside honey farms, selecting each partner and landscape with intention. Every ingredient is evaluated for purity, provenance, and alignment with our environmental values.
