PLEASE NOTE: Whole Truffles will often have a little nick , we call this a "canifer". This is a man-made nick done to check the ripeness of the flesh, by the forager. The forager will make a little cut with a special knife called a "canife”, hence the term "canifer".

FRESH BURGUNDY TRUFFLES
Tuber Uncinatum

Good morning everyone,

We are pleased to announce that Burgundy Truffle (tuber uncinatum) season has started! 

If you are unfamiliar with Burgundy truffles, they are very similar in appearance to Black Summer truffles, however their flesh is slightly darker in color, leaning toward a golden brown interior. The aromas are also very similar Black Summer Truffles with light hazelnut and fresh cut grass scents coupled with a noticeable earthiness.

In this first batch of the season, we are seeing some very nice quality. Despite dry conditions across Europe, these truffles are showing even ripeness with very pronounced aromas. They are well formed and round and feature some elaborate marbling when sliced.

This week we will be offering whole truffles only. Prices are slightly higher than the Black Summer truffles.

Profile: Skin has a black, rocky outer layer. Flesh ranges from White To Beige in color.
