Fresh truffle types & yield guide

Dating back to 1600 B.C., truffles are known as “diamonds of the earth.”

With 200 species of truffles, Black Summer, Burgundy, White, and Black Winter truffles are the most sought after.

Chocolate truffles are named after the mushroom because of their close resemblance.

Truffles are considered an aphrodisiac due to a pheromone that also attracts pigs, the original truffle hunters.

How long do truffles keep?
Truffles should be consumed promptly due to their short shelf life. Black Summer, Burgundy, and Black Winter varieties last 5-7 days, while White truffles last 2-3 days.

What do truffles pair well with?
Truffles shine best in subtle-flavored dishes like traditional eggs, pasta, and risotto. In modern cuisine, creativity knows no bounds, with truffles enhancing sushi, ramen, steaks, and desserts.

How do truffle species differ?
Burgundy and Black Summer truffles are the same species, harvested at different times of the season. Black Winter and Australian truffles are also the same species, harvested in different hemispheres.

How do I store fresh truffles?
For optimal truffle dish results, store them individually in paper towels within a sealed container and rewrap daily to maintain dryness. Older truffles can be stored in rice to remove excess moisture.
