PLEASE NOTE: Whole Truffles will often have a little nick , we call this a "canifer". This is a man-made nick done to check the ripeness of the flesh, by the forager. The forager will make a little cut with a special knife called a "canife”, hence the term "canifer".

Good morning and Happy New Year truffle fans!
We hope you all had a very nice start to the new year. This week, due to the observance of the holiday, we have a short shipping window (Tuesday to Thursday). However, we have good availability of both Black Winter Truffles (tuber melanosporum) and White Truffles (tuber magnatum pico).
We are still able to source a good amount of very good quality White Truffles. This week's batch shows very intense aromas and flavors that are rich, complex, and loaded with strong parmesan and earthy notes. The truffles are also nicely rounded and good-sized. The prices for white truffles are slightly lower this week.
On the Black Winter truffles side this week we are seeing peak season quality. There is plenty of nice, jet black flesh with very elaborate marbling. The aromas and the flavors are also very rich and robust. We have a good amount and we will be able to offer both Whole and Cut tiers this week. Prices this week for Black Winter truffles are slightly lower than last week.
