PLEASE NOTE: Whole Truffles will often have a little nick , we call this a "canifer". This is a man-made nick done to check the ripeness of the flesh, by the forager. The forager will make a little cut with a special knife called a "canife”, hence the term "canifer".

Good morning truffle fans,
We just received a very large batch of Black Winter Truffles (tuber melanosporum) this week. This batch has loads of very high quality truffles. The marbling has become more clearly defined as the flesh has darkened considerably. The flavor also continues to deepen with rich notes of espresso, cocoa, and earthy aromas.
This week we also have good availability on our White Truffles (tuber magnatum pico), which are of excellent quality. The quality of these truffles is highlighted by very nice aromatic intensity and depth of flavor. Due to very high demand, we recommend placing your orders early to ensure availability.
