PLEASE NOTE: Whole Truffles will often have a little nick , we call this a "canifer". This is a man-made nick done to check the ripeness of the flesh, by the forager. The forager will make a little cut with a special knife called a "canife”, hence the term "canifer".

Good morning everyone,
This week's batch of Black Summer Truffles (tuber aestivum) offers plenty of beautiful pieces. The quality continues to get better each week with stronger and earthier aromas coupled with large, well-formed round truffles. Prices are slightly down this week.
We will be offering only whole Black Summer truffles. The cuts tier is not available this week.
Australian Black Winter Truffles (tuber melanosporum) are just around the corner. As you know, it is currently late autumn in Australia and we expect Black Winter Truffles to be available shortly.
