OPRAH & SABATINO
Sabatino (the Balestra family) invited Oprah for a truffle hunt in Umbria, Italy in 2015. The trip began with an early morning truffle hunt for Black Winter Truffles (Tuber Melanosporum Vitt.). Our truffle hunter and his dogs, took Oprah, Gayle, and Gayle’s daughter Kirby into the forests to hunt for these truffles. Black Winter Truffles have a thick, course black exterior, and a black interior with white marbling. They have a very strong, earthy, cocoa aroma and flavor.
After a few hours of hunting, the discovered truffles are brought back to the Sabatino facility, where the truffles get cleaned.
Soon after, the cooking begins, and a Black Winter Truffle feast is ready to be served: various pastas, pizzas, focaccia, chicken, meats, and cheese – all covered in fresh truffles!
The next morning, the hunt continued, but this time, for the most prestigious truffle: the White Truffle (Tuber Magnatum Pico). White truffles have a thin, off white or pale yellow exterior, and a white to pink interior, with white marbling. The aroma and flavor is earthy, but reminiscent of garlic, cheese, bread, and walnuts.After a fresh truffle filled bag and truffle filled bellies, Oprah and her friends left Umbria, to share these truffles back home with loved ones.

Oprah’s Favorite Things initially began on The Oprah Winfrey Show in 1990 and then continued on to O, The Oprah Magazine.
Fast forward 27 years, and we’re filled with the most wonderful ideas in several categories: beauty, books, music, home goods, technology, and of course, food.
If there is one thing to know about Oprah, it’s her love of truffles! Her infatuation with truffles goes so much further than just eating them- she not only went truffle hunting, but also wrote a book titled Food, Health, and Happiness, filled with truffle recipes, and physically carries Sabatino truffle products in her purse!

FOOD, HEALTH AND HAPPINESS
Throughout the years, our relationship with Oprah grew, and her love of our truffle products grew too!
We’ve all been waiting for a cookbook, and finally her cookbook Food, Health, and Happiness was released in January 2017. There’s not just one, not just two, but 11 recipes using truffles! In her book, Oprah references that “Truffles are the ultimate posh spice” and products such as our Truffle Zest, Truffle Oil, and Truffle Salt are an affordable way that are used in her various recipes from popcorn, chicken pot pie, pasta, to salad.
The pasta recipe 'Cacio e Pepe' found in Food, Health, and Happiness on page 155, has a truffle twist, and is a recipe inspired by Federico Balestra, CEO of Sabatino Tartufi.
