Fresh Burgundy Truffles are Now in Season

TRUFFLE AVOCADO EGG SALAD

INGREDIENTS

SERVES: 4

3 Tablespoons mayonnaise

1 Tablespoon Sabatino Tartufi White Truffle Infused Avocado Oil

1 teaspoon Dijon Mustard

1 teaspoon lemon juice

Salt and pepper, to taste

2 teaspoons minced chives

6 hard boiled eggs, peeled and chopped

1 avocado, cubed

DIRECTIONS

1. In a medium bowl, whisk together mayonnaise, Truffle Avocado Oil, Dijon mustard and lemon juice.

2. Season with salt and pepper, to taste.Add eggs and avocado to the bowl and mix to incorporate.

3. Sprinkle chopped chives on top, serve.
