Truffle Avocado Pasta 

Bright, creamy, and full of flavor — this pasta is the perfect way to put those extra ripe avocados to good use. A fresh, wholesome dish elevated with fragrant basil, roasted garlic, and a truffle twist.

Truffle Avocado Pasta 

Ingredients

1 ripe avocado
1 bunch fresh basil
1 cup grated Parmesan
Juice and zest of ½ lemon
Sabatino Truffle Salt, to taste
Roasted garlic (1–2 cloves)
Freshly cracked black pepper
Drizzle of Sabatino Calabrian Truffle Crunch

Method

  1. Gently crush your roasted garlic and sauté in a pan with olive oil until fragrant and golden.
  2. Quickly blanch the basil in boiling water for about 15 seconds, then transfer to an ice bath to preserve its vibrant green color.
  3. Prepare your pasta of choice until al dente. Reserve a small cup of pasta water.
  4. In a blender, combine the avocado, blanched basil, sautéed garlic, Parmesan, lemon juice and zest, a splash of pasta water, Sabatino Truffle Salt, and black pepper. Blend until smooth and creamy.
  5. Toss the sauce with the cooked pasta in a pan over low heat until well coated. Serve warm, topped with extra Parmesan and a drizzle of Sabatino Calabrian Truffle Crunch.
