How To Store Fresh Truffles
You ordered a fresh truffle! Now how do you store it to preserve its freshness for as long as possible? When your truffle arrives, be sure to open your box and take it out of the packaging. You'll need an air-tight container, paper towels, and a fridge.
Unpack upon arrival.
When your fresh truffle arrives to your doorstep, immediately take it out of the box and its bag. Remove the paper towel it is currently wrapped in and replace it with a new one.
Keep them cold, but dry.
Store fresh truffles in the refrigerator at a consistent temperature (around 35–39°F). Moisture is the enemy of truffles, so always keep them dry. If they start to become squishy you can store them with risotto to help absorb some moisture.
Wrap and protect.
Gently wrap each truffle in a clean paper towel to absorb excess moisture. Place them in an airtight container, but avoid sealing in condensation.
Change paper towels daily.
Truffles naturally release moisture as they age. Replacing the paper towel each day helps prevent spoilage and keeps the truffle fresh longer.
Use them quickly.
Fresh truffles are best enjoyed at peek freshness. Use your white truffle within 1-3 days and black truffle 3-7 days of arrival. Their aroma is most intense in the first few days, so plan to shave or grate generously.
Optional tip: Store truffles with eggs or butter in a sealed container to naturally infuse them with truffle aroma—just be sure the truffle remains wrapped.
With the right care, your truffles will stay fragrant, flavorful, and ready to elevate every dish.
