Fresh Winter Australian Truffles are Now in Season

BACON, EGG, AND TRUFFLE ZEST® BISCUITS

INGREDIENTS

2 Truffle Zest buttermilk biscuits
2 slices thick-cut bacon
1 tbsp butter
2 large eggs
1 tbsp heavy cream
Kosher salt and freshly ground black pepper, to taste
2 slices cheese, any variety (optional)

DIRECTIONS

1. In a medium-large nonstick skillet, cook bacon over medium heat until crisp, but not burnt, about 2-3 minutes per side. Remove bacon from skillet and wipe away excess grease from pan.

2. Preheat skillet over medium heat and melt butter while you prepare eggs.

3. In a bowl, whisk together eggs, heavy cream, salt and pepper. When smooth, add eggs to skillet and quickly stir / whisk until eggs are just set but not completely cooked through. Remove skillet from heat and continue to whisk until scrambled eggs are cooked to your liking.

4. To assemble, place cheese (if using) on biscuits, then layer eggs and bacon on top to complete.

5. Serve and enjoy.
