Truffle Avocado Pasta
Bright, creamy, and full of flavor — this pasta is the perfect way to put those extra ripe avocados to good use. A fresh, wholesome dish elevated with fragrant basil, roasted garlic, and a truffle twist.
Ingredients
1 bunch fresh basil
1 cup grated Parmesan
Juice and zest of ½ lemon
Sabatino Truffle Salt, to taste
Roasted garlic (1–2 cloves)
Freshly cracked black pepper
Drizzle of Sabatino Calabrian Truffle Crunch
Method
- Gently crush your roasted garlic and sauté in a pan with olive oil until fragrant and golden.
- Quickly blanch the basil in boiling water for about 15 seconds, then transfer to an ice bath to preserve its vibrant green color.
- Prepare your pasta of choice until al dente. Reserve a small cup of pasta water.
- In a blender, combine the avocado, blanched basil, sautéed garlic, Parmesan, lemon juice and zest, a splash of pasta water, Sabatino Truffle Salt, and black pepper. Blend until smooth and creamy.
- Toss the sauce with the cooked pasta in a pan over low heat until well coated. Serve warm, topped with extra Parmesan and a drizzle of Sabatino Calabrian Truffle Crunch.
