Each year, we welcome chefs, partners, and customers to experience the heart of our operations and immerse themselves in the stories and traditions that define Sabatino. Each trip is unique, designed around the seasonal flavors and treasures of the region. This past fall, we led a culinary journey through Umbria—a trip designed not only to showcase the excellence of our truffle products but also to deepen their understanding of the land that inspires everything we do.
Day 1: Orvieto and Arrival at the Sabatino Farm Estate
Our first day began with a visit to Orvieto, a town known for its ancient streets and the iconic Orvieto Cathedral. This historic site has stood for centuries, a testament to the region’s artistic and cultural heritage.
Later, we welcomed the chefs to our farm estate in Montecastrilli. Dinner featured fresh, local ingredients and, of course, our signature truffles. It was the perfect setting for conversations about the art of sourcing and working with this extraordinary ingredient.
Day 2: Truffle Hunting and Our Facility Tour
The next day, the chefs joined us for one of Umbria’s most treasured traditions: truffle hunting. Our expert hunters and trained Lagotto Romagnolo dogs led the group into the forests near Montecastrilli. The experience highlighted the delicate balance between nature, patience, and skill that defines truffle hunting.
Afterward, we toured Sabatino’s headquarters and manufacturing facility to give our guests an in-depth look at how we turn freshly harvested truffles into the oils, zests, and seasonings they use in their kitchens around the world. Seeing the process—from harvest to final product—helped reinforce why truffles are so valued in the culinary world.
Lunch was served at Decugnano dei Barbi, a local winery where we tasted wines produced from vineyards with centuries of history, perfectly complementing the truffle-forward dishes on the menu.
Day 3: Umbrian Specialties – Wine, Olive Oil, and Cheese
On Day 3, we visited Montefalco, a town known for producing the robust Sagrantino wine. At Cantina Montioni, the chefs learned about the interplay between wine, olive oil, and the land that nurtures them both.
Later, we toured Montecristo, a local cheese producer renowned for its pecorino. Tasting these artisanal products alongside truffle-infused delicacies sparked discussions about pairing techniques and how regional ingredients shape modern cuisine.
The day ended with a visit to Todi, where we enjoyed an aperitivo in the town’s medieval square—a moment to reflect on the deep ties between food, community, and history in Umbria.
