PLEASE NOTE: Whole Truffles will often have a little nick , we call this a "canifer". This is a man-made nick done to check the ripeness of the flesh, by the forager. The forager will make a little cut with a special knife called a "canife”, hence the term "canifer".

Good morning everyone,
This week we are fully stocked with large batches of Australian Black Winter Truffles (tuber melanosporum) and Black Summer Truffles (tuber aestivum) which are absolutely perfect.
Our Black Winter Truffles from Australia continue to show excellent quality with very deep, earthy aromas. The marbling is also phenomenal with really nice contrast that is sure to wow your customers.
Availability will be very good and we will be offering two tiers - cuts and whole truffles. Prices are steady this week.
As for our Black Summer Truffles (tuber aestivum), the quality remains very good with nice ripeness and pronounced aromas. The flavor continues to be complex with roasted hazelnut aromas and light earthy flavors.
Prices for Black Summer Truffles are steady as well this week.
