PLEASE NOTE: Whole Truffles will often have a little nick , we call this a "canifer". This is a man-made nick done to check the ripeness of the flesh, by the forager. The forager will make a little cut with a special knife called a "canife”, hence the term "canifer".
FRESH BURGUNDY TRUFFLES

Good morning everyone,
We just received another very nice batch of Burgundy Truffles (tuber uncinatum) loaded with some top quality truffles! However, like last week, quantities are somewhat limited so be sure to place your orders early to ensure availability.
The aromas this week feature intense nutty aromas and fresh cut grass accents coupled with pronounced earthiness.The truffles in this batch are showing even ripeness and very nice marbling when sliced.
This week we will be offering whole truffles only this week. Prices have increased slightly from last week.
We expect to have an update on White Truffles (tuber magnatum pico) in the next few weeks. We are continuing to monitor the quality of white truffles on the market. When we begin seeing good quality, we will begin offering them to you.
