PLEASE NOTE: Whole Truffles will often have a little nick , we call this a "canifer". This is a man-made nick done to check the ripeness of the flesh, by the forager. The forager will make a little cut with a special knife called a "canife”, hence the term "canifer".

Good morning truffle fans!
This week's batch of Black Winter Truffles (tuber melanosporum) is again loaded with some amazing quality pieces. We are still in peak season for Black Winter truffles and it shows in the truffles we're able to offer you this week. The interior is pitch black with lots of hypnotic marbling.
The flavor and aromatic intensity continues to be top class as well. However, the amount of truffles harvested this week is considerably lower than the past few weeks. We are still able to offer both Whole and Cut tiers this week. Prices this week are slightly higher due to the lower quantities available.
