PLEASE NOTE: Whole Truffles will often have a little nick , we call this a "canifer". This is a man-made nick done to check the ripeness of the flesh, by the forager. The forager will make a little cut with a special knife called a "canife”, hence the term "canifer".

Good morning truffle fans,

This week we have a good amount of White Truffles (tuber magnatum pico) available. The latest batch is showing really good quality with more intensity of aromas and flavor. While there are more white truffles available, we still urge you to place your orders early to ensure availability as demand remains very strong. Prices for white truffles are up from last week. 

This will likely be the last week for Burgundy Truffles (tuber uncinatum). Our latest batch is plentiful and loaded with very nice specimens. The aromas continue to increase in intensity with loads of earthy and nutty notes. This batch also features good, even ripeness and very good marbling. Prices are steady for Burgundy truffles this week. 

We are anticipating the availability of Black Winter Truffles (tuber melanosporum) as early as next week. We received a test batch of Black Winter Truffles this morning and the quality is looking very good. While the flesh is a bit lighter in color at the start of the season, the flavors and aromas are considerably more intense than Burgundy truffles.
