Fresh truffles best pair with dishes that are more subtle in flavor to allow for the truffles to shine. Think butter, creams, eggs, pasta, potatoes… all of which have a neutral flavor.
Truffles, known as the "diamonds of the earth," have been admired since 1600 B.C.
These fungi form a mutually beneficial relationship with certain trees like Oak, Hazelnut, and Poplar.
There are about 200 truffle species, with the most revered ones, like Black Summer (Aestivum Vitt), Burgundy (Uncinatum), and Black Winter (Melanosporum), found in France, Italy, and Australia, and White (Magnatum Pico), found exclusively in Italy.
Truffles can be found growing in the wild, and advancements in science have allowed for the creation of truffle plantations by inoculating spores onto certain trees.
Since pigs were banned in Italy for truffle hunting in 1985, dogs have replaced pigs due to their ability to be trained, accurately locate truffles without disrupting the environment, and lack attraction to truffle pheromones.
The preferred dog breed in Italy for truffle hunting is the Lagotto Romagnolo, although other breeds like pointers and braccos are also commonly used.

Fresh Truffles: Wrap in a clean, dry paper towel and seal in an air-tight container. Store in the refrigerator around 34-36 degrees F.
Black Summer, Burgundy, and Black Winter have a shelf life of 5-7 days.
White truffles have a shorter shelf life of 2-3 days.
Truffle Products: Store dry goods in a cool, dry place.
Shaved truffles: Purchase a truffle slicer or use a mandoline. If you have great knife skills, you can thinly slice the truffles.
Grated truffles: Use a cheese grater.
Chopped truffles: Use your chef's knife to rough chop or finely mince your truffles.
